Food Pairings for Two Hands Shiraz Mclaren Vale Lily's Garden
B&B, Bold and Beautiful, dark - inky dark in the glass, with powerful notes of cedar in the nose, and wondrous peppery fruits and pencil shavings in the mouth. Earthy and apocalyptic, it's pricy but a rare find, it tastes much more expensive than it is. This is my idea of a Shiraz.

Deep colour intensity of inky purple; a lovely shade. Slow developing legs, plump and luscious with a deep berry nose. Ultra-smooth mouthfeel, spice and rich, intense ripe fruit. Well-balanced and silky. The spice (black pepper) turns to anise, then to rich berry in the complex, interesting (and long) finish. Great stuff.

The extraordinary 2003 Shiraz Lily's Garden exhibits an inky ruby/purple hue to the rim in addition to a stunning aromatic display of blackberries, cassis liqueur, licorice, smoky oak, sweet chocolate, and espresso roast. A fabulously concentrated, multidimensional, layered wine with power, elegance, and a seamless personality, it can be drunk young or cellared for a decade or more.
COLOUR Dense colour, dark purple plum. AROMA Gloriously generous fruit with subtle complimentary overtones of vanillin spice; enhancing, rather than dominating, the wonderful spicy plum fruit of this wine. PALATE Oodles of rich juicy fruit. It shows delicious and distinctive mocha, chocolate and sweet plum characters. Backed by a lush, plush mouthfeel laced with an underlying black pepper spice and a silky tight tannin structure. WINEMAKING Crushed into and fermented in 5-10 tonne open top fermenters with regular pump overs; three daily during peak fermentation to extract colour and tannin. Following 7-14 days of maceration the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked to barrel. Malolactic fermentation takes place in barrel. Minimal fining and non filtered. MATURATION 14 months in 20% new American oak hogsheads, the balance in seasoned 1, 2 and 3 year old American oak. ANALYSIS Alc 14.8%, pH 3.31, Acidity 7.63 CELLAR POTENTIAL 8 to 10 years REGION McLaren Vale South Australia.
