Two Hands Shiraz Barossa Valley Ares 2010
COLOR Dense black AROMA Dark fruits, bitter chocolate, subtle char, graphite and spice, grilled meats. TASTE Extremely complex and flavorsome but quite restrained. Full of dark fruits and chocolate, spice and char that roll on and on, all wound up with fine long subtle tannins. Length/Type of Fermentation: Crushed, de-stemmed and fermented in five, seven and 10 ton open top fermenters with regular pumpovers; up to three times daily during peak fermentation to extract color and tannin. Following 7-21 days of "on skins" maceration the free run was drained to tank with the skins then pressed. Both the free run and pressings are blended to tank and then racked to oak after 24 hours. Malolactic fermentation takes place in barrel. Minimal fining and non-filtered. Length/Type of Aging: 23 months maturation with the final 12 months in 100% new French oak hogsheads.

This flagship Shiraz from Two Hands is a select blend of the finest barrels of from Barossa Valley and McLaren Vale. A very limited production that's aged for 23 months in oak barrels including 12 months in 100% new French oak. The IWC scored it 94 points and Wine Spectator gave it 95 saying "Red Big and brawny, with a dense core of fresh blueberry, currant, raspberry and dusky spice flavors that sprawl over a layer of prickly tannins. It all melds together on the finish, shooting off sparks of espresso and licorice. The afterburners kick in and this sails off into a long coda. Needs time to soften. Shiraz. There are three "icon" wines in the portfolio. The opaque purple-colored 2006 Ares is a 100% Shiraz cuvee sourced from Barossa (77%) and McLaren Vale (23%) which received some "200% new oak" treatment. Following a barrel selection of the winery's best Shiraz (not all of which was in new oak), the wine spent its last 12 months of elevage in 100% new French barriques. It offers up a room-filling perfume of toasty oak, pencil lead, vanilla, pepper, sage, plum, and blueberry pie. Opulent and layered on the palate, this extracted, mouth-filling effort has tons of succulent fruit, savory flavors, and a very long, fruit-filled finish. It will reward 6-8 years of cellaring and have a drinking window extending from 2015 to 2031. Polished and generous. The 2004 Shiraz Ares is spectacular. Aged 12 months in 100% new French oak, the Ares is produced from the finest 20 barrels from the Bella's Garden cuvee. Inky/blue/purple with notes of graphite, blueberries, blackberries, black currants, licorice, and smoke, this is a full-bodied, super-rich, intense, fabulously pure, rich Shiraz with a multidimensional mid-palate as well as a 45+ second finish. It will benefit from 2-4 years of bottle age, and should keep for 2-3 decades.
Rich and generous with its silky tannins and expressive black cherry, blackberry, huckleberry and meaty spice notes that flit through the long, round, oak-scented finish. Has great vibrancy and detail, and the finish lingers for days. Shiraz. Drink now through 2020.
Inky violet. Initially brooding, dense and chocolaty, then quickly unwinds to show the full range of dark fruit tones: boysenberry, mulberry, blueberry, blackberry and cassis. A complicating note of smoked meat emerges with air, along with sexy oak spice (this was raised in 100% new French oak of fancy lineage) that adds a sweet impression but doesn't get in the way. Huge, mouthfilling, layered and rich but also remarkably fresh and vibrant, with the dark berry flavors joined by a brighter cherry quality that adds vibrancy and thrust. A powerful suggestion of exotic spicecake develops on the finish, which shows big but thoroughly buffered tannins. Amazing shiraz that should develop for many years to come.
