Two Hands Shiraz Barossa Valley Ares 2010

Winemaker's Notes:

COLOR Dense black AROMA Dark fruits, bitter chocolate, subtle char, graphite and spice, grilled meats. TASTE Extremely complex and flavorsome but quite restrained. Full of dark fruits and chocolate, spice and char that roll on and on, all wound up with fine long subtle tannins. Length/Type of Fermentation: Crushed, de-stemmed and fermented in five, seven and 10 ton open top fermenters with regular pumpovers; up to three times daily during peak fermentation to extract color and tannin. Following 7-21 days of "on skins" maceration the free run was drained to tank with the skins then pressed. Both the free run and pressings are blended to tank and then racked to oak after 24 hours. Malolactic fermentation takes place in barrel. Minimal fining and non-filtered. Length/Type of Aging: 23 months maturation with the final 12 months in 100% new French oak hogsheads.

The 'two hands' are Michael Twelftree and Richard Mintz who formed the company in 1999 with the clear objective of making the best possible shiraz based wines from prized shiraz producing regions within Australia. Michael Twelftree, initially from a construction background, spent a number of years exporting Australian wine to USA and Asia. Richard Mintz, a chartered accountant, was formerly CEO of one of Australia's leading cooperages in the Barossa Valley, South Australia. With Twelftree’s contacts and wine savvy approach and Mintz’s management skills and business acumen, the two old friends decided to make some wine together. In 2000 they started with just 17 tonnes of fruit from the McLaren Vale and Padthaway wine regions. From the beginning the wines were very well received at home and abroad with a healthy stream of reviews, culminating in 2004 with Robert M. Parker pronouncing Two Hands as "the finest negociant operation south of the equator". The heart of the operation is based in the Barossa Valley; the cellar door and winery are located in the sub district of Marananga. Opened in December 2003, the cellar door is already regarded as one of the highlights of the region with its contemporary interior design and commitment to providing guests with an educational and personal wine experience. The Marananga winery was officially opened in November 2004, designed specifically for small batch production of the very best parcels of fruit. Since the winery opened, Two Hands sucess has gone from strength to strength with numerous accolades defining the culture of the organisation. Two Hands Wines were listed in the Wine Spectator Top 100 for the last five years with two listings in the top 10, most recently the 2005 Bella's Garden Barossa Valley Shiraz at #5 and The Ares voted one of the 25 Benchmark Wines of Australia. Consistent 90+ reviews from Robert Parker Jnr's Wine Advocate, Stephen Tanzer's International Wine Cellar, James Halliday's Wine Companion, Wine Spectator and the UK Decanter magazine is further testament to the company's ability to capture the terroir of each vineyard and carefully nurture the characteristics of each parcel. Two Hands continues to extend its distribution around the world, branching out from the Australian domestic and United States of America markets to now include the export markets of the United Kingdom, Asia, Canada, New Zealand and the European Union. This flagship Shiraz from Two Hands is a select blend of the finest barrels of from Barossa Valley and McLaren Vale. A very limited production that's aged for 23 months in oak barrels including 12 months in 100% new French oak. The IWC scored it 94 points and Wine Spectator gave it 95 saying "Red Big and brawny, with a dense core of fresh blueberry, currant, raspberry and dusky spice flavors that sprawl over a layer of prickly tannins. It all melds together on the finish, shooting off sparks of espresso and licorice. The afterburners kick in and this sails off into a long coda. Needs time to soften. Shiraz. Best from 2011 through 2019." On Sale!

There are three "icon" wines in the portfolio. The opaque purple-colored 2006 Ares is a 100% Shiraz cuvee sourced from Barossa (77%) and McLaren Vale (23%) which received some "200% new oak" treatment. Following a barrel selection of the winery's best Shiraz (not all of which was in new oak), the wine spent its last 12 months of elevage in 100% new French barriques. It offers up a room-filling perfume of toasty oak, pencil lead, vanilla, pepper, sage, plum, and blueberry pie. Opulent and layered on the palate, this extracted, mouth-filling effort has tons of succulent fruit, savory flavors, and a very long, fruit-filled finish. It will reward 6-8 years of cellaring and have a drinking window extending from 2015 to 2031. Polished and generous. A plush mouthful of cherry, blackberry and creamy spice flavors that linger effortlessly on the long, open-textured finish. The 2005 Shiraz ldquo;Aresrdquo; is a glass-coating opaque purple. The nose delivers tar, scorched earth, saddle leather, blueberry, and a hint of chocolate. Opulent, layered, and intensely flavored, it has excellent integration of oak, tannin, and acidity and enough hidden structure to evolve for up to a decade. Drink this tasty Shiraz through 2025.
