Winemaker's Notes:

COLOUR Black to the core. AROMA Very complex amalgam of aromas such as; Licorice, tar, earth, cedar chocolate and the blackest of fruits such as Boysenberry, blackberry and fresh prunes. PALATE 2005 has produced wines of stellar power and concentration whilst remaining perfectly balanced. The 2005 Ares is no exception. Incredibly viscous and concentrated with excellent poise and balance for such a powerful wine, the acid and tannins working in perfect harmony. The tannins are integrated throughout and will help the wine mature gracefully. WINEMAKING Crushed and fermented in 5-10 tonne open top fermenters with regular pump overs; three daily during peak fermentation to extract colour and tannin. Following 7-21 days of maceration the dry free run is drained to tank, the wine is then racked to barrel. Malolactic fermentation takes place in barrel. Minimal fining and non filtered. MATURATION 22 months maturation with the final 12 months in 100% new French oak hogsheads. ANALYSIS Alc 15.4%, pH 3.2, Acidity 7.8 CELLAR POTENTIAL 20+ years if carefully cellared REGION Barossa Valley South Australia

The 'two hands' are Michael Twelftree and Richard Mintz who formed the company in 1999 with the clear objective of making the best possible shiraz based wines from prized shiraz producing regions within Australia. Michael Twelftree, initially from a construction background, spent a number of years exporting Australian wine to USA and Asia. Richard Mintz, a chartered accountant, was formerly CEO of one of Australia's leading cooperages in the Barossa Valley, South Australia. With Twelftree’s contacts and wine savvy approach and Mintz’s management skills and business acumen, the two old friends decided to make some wine together. In 2000 they started with just 17 tonnes of fruit from the McLaren Vale and Padthaway wine regions. From the beginning the wines were very well received at home and abroad with a healthy stream of reviews, culminating in 2004 with Robert M. Parker pronouncing Two Hands as "the finest negociant operation south of the equator". The heart of the operation is based in the Barossa Valley; the cellar door and winery are located in the sub district of Marananga. Opened in December 2003, the cellar door is already regarded as one of the highlights of the region with its contemporary interior design and commitment to providing guests with an educational and personal wine experience. The Marananga winery was officially opened in November 2004, designed specifically for small batch production of the very best parcels of fruit. Since the winery opened, Two Hands sucess has gone from strength to strength with numerous accolades defining the culture of the organisation. Two Hands Wines were listed in the Wine Spectator Top 100 for the last five years with two listings in the top 10, most recently the 2005 Bella's Garden Barossa Valley Shiraz at #5 and The Ares voted one of the 25 Benchmark Wines of Australia. Consistent 90+ reviews from Robert Parker Jnr's Wine Advocate, Stephen Tanzer's International Wine Cellar, James Halliday's Wine Companion, Wine Spectator and the UK Decanter magazine is further testament to the company's ability to capture the terroir of each vineyard and carefully nurture the characteristics of each parcel. Two Hands continues to extend its distribution around the world, branching out from the Australian domestic and United States of America markets to now include the export markets of the United Kingdom, Asia, Canada, New Zealand and the European Union. Inky violet. Initially brooding, dense and chocolaty, then quickly unwinds to show the full range of dark fruit tones: boysenberry, mulberry, blueberry, blackberry and cassis. A complicating note of smoked meat emerges with air, along with sexy oak spice (this was raised in 100% new French oak of fancy lineage) that adds a sweet impression but doesn't get in the way. Huge, mouthfilling, layered and rich but also remarkably fresh and vibrant, with the dark berry flavors joined by a brighter cherry quality that adds vibrancy and thrust. A powerful suggestion of exotic spicecake develops on the finish, which shows big but thoroughly buffered tannins. Amazing shiraz that should develop for many years to come.

Delineates its ripe plum, blueberry and currant flavors with precision, shading the fruit with nuances of coffee and dark chocolate, hinting at smoke and licorice as the finish laps at the palate like the shore of a deep lake. Shiraz. Best from 2010 through 2020.

The 2004 Shiraz Ares is spectacular. Aged 12 months in 100% new French oak, the Ares is produced from the finest 20 barrels from the Bella's Garden cuvee. Inky/blue/purple with notes of graphite, blueberries, blackberries, black currants, licorice, and smoke, this is a full-bodied, super-rich, intense, fabulously pure, rich Shiraz with a multidimensional mid-palate as well as a 45+ second finish. It will benefit from 2-4 years of bottle age, and should keep for 2-3 decades.

Rich and generous with its silky tannins and expressive black cherry, blackberry, huckleberry and meaty spice notes that flit through the long, round, oak-scented finish. Has great vibrancy and detail, and the finish lingers for days. Shiraz. Drink now through 2020.

The 2005 Shiraz ldquo;Aresrdquo; is a glass-coating opaque purple. The nose delivers tar, scorched earth, saddle leather, blueberry, and a hint of chocolate. Opulent, layered, and intensely flavored, it has excellent integration of oak, tannin, and acidity and enough hidden structure to evolve for up to a decade. Drink this tasty Shiraz through 2025.

Inky violet. Outrageously scented nose combines pungent floral, spice and mineral tones with kirsch, blackcurrant and blueberry aromas. Surprisingly zesty in the mouth, with vibrant red, black and blue fruit flavors sharpened by peppery minerality and sweetened by hints of floral pastille and mocha. Therersquo;s energy and cut here that reminded me of cabernet more than shiraz. The incisive finish features a dark berry skin tone and a bright jolt of cracked pepper. Can you call it a finish when it doesnrsquo;t stop? Twelftree says that his goal here was to make a 15-to-20-year wine.
