Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Winemaker's Notes:

COLOUR Deeply coloured with a bright cherry hue. AROMA Bouquet of fresh black cherry, raspberry and blackberry fruit. PALATE A bright focused style, the palate is medium bodied with silky fine tannins and an almost imperceptible hint of oak. Refreshing flavours of fresh cherry and raspberry abound WINEMAKING The grapes were crushed into and fermented in open top potters, with regular pump overs twice daily to extract flavour, colour and tannin. The grapes were then pressed and the wine was transferred to tank and then racked to barrel for oak maturation. MATURATION 88% unoaked, 12% spent 7 months in old French and American oak hogsheads. ANALYSIS Alc 15%, pH 3.36, Acidity 6.38 CELLAR POTENTIAL 5 to 7 years REGION Predominantly from hand picked 80 year old Grenache vines, grown on deep red loamy clay soils in the sub district of Greenock in the Barossa Valley South Australia.
