Winery owners Beata and Chris Tolley began assembling winemaking equipment two years ago, one of the first pieces of equipment was a sorting table. Even that recently, this was not standard equipment in many Okanagan wineries, and was almost never seen in start-up wineries. It signalled that this couple understood what had to be done to make quality wine, particularly with purchased grapes.
