Trivium Cabernet Sauvignon St. Helena les Ivrettes Vineyard 2007

Editorial Review by Gregory Dal Piaz:

A bit oaky on the nose though with some nice lurking tobacco and pepper tones. There’s some nice, slow to emerge red currant fruit here but it’s tight with slow to emerge floral and cocoa nuances. This enters with a nice slightly stiff tannic edge that is quickly joined by dense, wild berry fruit that helps to add some cover to the stiff little tannins. The fruit is vivid and slightly spicy on the plate with great red fruit notes accented by slight herb tones and a hint of orange rind. Very well behaved and balanced wine that finishes with real energy on the palate and a lingering chocolate covered cherry finale. Delicious. 93pts

Black pepper and other spices in the nose, really dark color on the body. The mouth is oaky, and a little bit jammy and tart, but very dry.

The 2007 Trivium is brilliant deep ruby, with deep blackberry aromas, hints of tobacco and roasted chestnuts, plus Les Ivrettes' typical stony terroir and grace notes of nutmeg, bay leaf and thyme. It's nothing short of pure Cabernet expression. In your mouth the wine is both rich and graceful, with firm structure disguised by mouth-coating suppleness. The finish is long, plush and chocolaty. Expect Trivium to develop well in the bottle for years.
