Trinitas Cellars Other 2004

Winemaker's Notes:

A classic California old world blend, Old Vine Cuvee is reminiscent of traditional Southern Rhone blends. It is a fruit-driven wine and is abundant with blackberries and blueberries with hints of vanilla. This full-bodied yet elegant wine is vibrant with multilayers of flavors and aromas leaving one's palate lingering. Enjoy now or cellar over the next 5 to 7 years. Winemaking: Our Old Vine Cuvee is predominately a blend of Zinfandel (29%), Mataro (26%) and Carginane (22%) with significant aromas of Petite Sirah (16%) blended in for structure, color and complexity. A little Alicante Bouschet (4%) and Black Malvoisie (3%) were added for additional mouth feel and some perfume aromatics. Fermented separately and then blended after partial barrel aging, this wine was carefully constructed to match the individual strengths of each varietal. The modern technique of cold soaking th grapes prior to fermentation and a slow cool fermentation rate insured th maximum extraction of bitter tannins from the skins and seeds.
