The wine is fermented entirely in stainless steel, with no oak—I like my white wines clean and refreshing. One of the first bottlings to come our way bearing the new Calistoga appellation, this wine smells of grass and freshly mown hay-like traits, and, while fairly ripe, it goes wanting for an increased sense of "juice". Its lack of fruity substance allows both bitterness and a bit of noticeable heat to show through at the end.Connoisseurs' Guide to California Wine aging recommendation: Drinkable now. Unlikely to improve with further aging.
