These grapes were affected by Botrytis in about 10% of the Clusters. As a result, the grapes achieved a high level of sugar without too much dehydration, thereby creating a wine full of wonderful freshness yet showing the special ‘ Noble Rot’ character. (‘Noble Rot’ is a beneficial mold that grows on ripe white wine grapes in the vineyard under specific climatic conditions. Through the process, the wine developed seductive aromas of peach, apricot, ginger and buttered toast. The wine is high in residual sugar yet incredibly balanced with a rich, complex, honeyed character.
