Soil: The soil is acidic, poor in organic minerals, but rich in schist and quartz pebbles.<br/><br/>Vinification Length: 20 days<br/><br/>Vinification Method: The maceration of the entire berry takes place at controlled temperature (25° C) during 20 days minimum. The extraction of the tannins is conducted in presence of oxygen.<br/><br/>Vinification Temperature: 25°C.<br/><br/>Malolactic: yes<br/><br/>Sugar Rate: 0-5 g/l
