Tortoise Creek Pinot Noir les Oliviers 2012

Winemaker's Notes:

This delightful little Pinot is from Limoux in the south of France. The grapes were destemmed and then crushed, and fermentation and maceration took place in stainless steel tanks. About 30% of the wine was aged in new French oak barrels for 3 to 4 months. With its supple texture yet bright acidity, it paired beautifully with assorted sushi rolls, salmon and tuna entrees when we had dinner with Tortoise Creek owner Mel Master whom we have known for over a decade.Try at home with chicken, salmon or light meat dishes.
