2006 Estate Grown TOLOSA Sauvignon Blanc Varietal Composition: 100% Edna Ranch Sauvignon Blanc Appellation:Edna Valley Production:982 cases Vineyard Information The Salaal Vineyard of Edna Ranch is planted to both Clone 1 and the Musqué clone of Sauvignon Blanc. Making use of both clones lends interest and complexity to the palate. Care must be taken in the vineyard throughout the season to provide proper sunlight exposure to the fruit to properly develop the intense varietal aromas, without the dominance of 'grassy'character. Winemaking & Cellar Information Tolosa Sauvignon Blanc is an aroma driven wine, and every winemaking decision is made with ultimate aromatic potential in mind. Early morning harvesting by hand, gentle pressing, and early press cuts are crucial to bringing only the highest quality juice to the fermentor. Larry and Nathan developed a unique two-stage cool-temperature fermentation technique based on recent research specific to Sauvignon Blanc, in order to maximize expression of the highly desireable aromas latent in our quality Estate Grown fruit.
