Tolosa Petite Sirah 2005

2005 TOLOSA Estate Petite Sirah Varietal Composition: 86% Petite Sirah; 14% Syrah Appellation: Edna Valley AVA Production: 235 cases Vineyard Information The Tolosa Estate contains just over one acre of Petite Sirah, planted in the warmest, most sheltered part of our vineyard, protected from the cool maritime breezes that typify our terroir. This location allows for maximum ability to mature this late-ripening grape, which is more commonly found in the hot, inland appellations of California. After a prolonged hang time, this is one of the last varieties to arrive at the winery each season. Winemaking & Cellar Information Petite Sirah is naturally loaded with color and tannin, and the goal of winemaking is to extract and stabilize enough color and rich, smooth mouthfeel without developing excessive astringency and bitterness. Hand harvesting and careful destemming help to move the fruit gently to the fermentor with minimal breakage. Selected yeast strains help to develop richness of mouthfeel, and emphasize the rich fruit flavors. Punchdowns progress by hand, twice daily, and the wine is pressed off in a small, very gentle basket press. We blended a small amount of our Estate Syrah into the 2004 vintage, bringing increased aroma and refinement to the wine. After 17 months in a selection of new and used American and French oak barriques, we bottled the Petite Sirah without filtration. Analytical Information: Alcohol: 14.2% T.A.: 5.25g/L pH: 3.79 Brix at Harvest: 25.2° Tasting Notes Deep black-violet in color, with wild, briar-patch and new leather aromas. Ripe blackberry jam, cassis, molasses, and dried orange peel on the palate, with a richness and balance that are impressive in such a massive wine. Decanting or aging will help to tease out the more delicate aromas. Will pair nicely with roast lamb, marinated pork ribs, or tri-tip.
