Food Pairings for Tolosa 'Legacy' Vigonier
We began as usual in the vineyard. The goal was to get the fruit as ripe as possible without any raisins. Our desire was to have the maximum concentration of fresh fruit when we started. After pressing the grapes as gently as possible we took the juice to a commercial freezer and had it frozen solid. It was then brought back to the winery and allowed to slowly thaw out. By leaving a certain amount of ice behind the juice is effectively concentrated as is the case with ice wine. Not only sugar, but flavors as well are concentrated by this process. The fermentation went very slowly in tank. The finished wine has a low alcohol of 10% combined with a fairly high sugar of 14%.
The color is very pale greenish yellow, almost silvery. The primary aromas are of orange and orange blossom with undertones of custard. There is a hint of melon character as well – like cantaloupe. On the palate there is a sweet entrance and heavy honey like mid palate, surprisingly followed by a clean fresh finish. Despite its residual sugar and relatively low acidity this wine is not cloying.
