Winemaker's Notes:

100% cabernet sauvignon from two hillside Dry Creek Valley growers. Brian Galloway and Elva Lewis have provided thumbprint with sustainably farmed cabernet sauvignon grapes, which is organic, just not certified. As I was tasting through my blending trials, I realized the balance and complexity was built from these two unique vineyards: Lewis hilltop brings acidity and smoothness and Galloway hillside offers structure and complexity. Spiced plum and currant aromas lead to flavors of red raspberry, cocoa, subtle blueberry, a trace of nutmeg and vibrant acidity. Soft velvety tannins round off this complex yet friendly cab that promises to age gracefully. Pair with a wide variety of cuisine. Bottled unfiltered and unfined. ALC. 14.5%, pH 3.70 TA 0.69g/100ml ~Vegan~ 250 cases crafted
