What to Expect

Cabenet Sauvignon: Originally of French origins, this versatile grape produces exceptional wines around the globe. It's usually medium to full bodied with a fine structure that supports black and red fruit flavors with typical notes of olive, chili and herbs that add complexity.

Winemakers Notes

Vintage
The 2002 vintage started with a cool spring leading to
above average temperatures in July and August. The midsummer
heat advanced ripening into the beginning of
September when temperatures moderated and became
ideal harvest weather. Moderate day temperatures and cool
nights allowed ample “hang time” for the flavors to develop.
Vineyards
The 2002 Columbia Valley Cabernet Sauvignon was
sourced from Champoux Vineyard, Stillwater Creek
Vineyard, Katherine-Leone Vineyard, Alder Ridge
Vineyard, Alder Creek read more...Vineyard, Sagemoor Farms, Ahler
Vineyard, Martinez Vineyard and Conner-Lee Vineyard. All
of these vineyards are located in the Columbia Valley
region of Washington. Harvest dates varied from
September 24 through October 19 of 2002. All the
fruit is hand harvested into small bins in the early morning
hours and processed immediately upon arrival at the winery.
Fermentation & Aging
The fruit was destemmed and crushed into small fermentors
where the fruit was either punched down by hand three
times a day or pumped over twice daily. Primary fermentation
lasted, on average, seven days. At this time the skins were
gently pressed off and fermentation was completed in barrel.
Malolactic fermentation occurred in barrel adding a viscous
mouthfeel and complexity to the wine. While aging in oak
barrels the wines were racked every three months to naturally
clarify the wine.
