The Dreaming Tree Cabernet Sauvignon North Coast 2016

An exciting collaboration between musician Dave Matthews and winemaker Sean McKenzie, The Dreaming Tree captures the spirit of California’s wine country. United by their shared passion to make quality wines accessible to everyone, the two friends set out on a journey to discover the unique characters and rich fl avors that give the region its rare charm. 2016 Vintage: Another mild winter brought an early bud break in February. Average rainfall created perfect conditions for soil, vine health, and a good fruit set, which brought in average-sized crops throughout most of the vineyards. A cooler summer without much high heat until September allowed the fruit to ripen evenly. Once the heat hit, the fruit was harvested and quickly brought into the winery, resulting in great quality red and white wines. These longer growing seasons with lower temperatures are ideal for developing and preserving the fruit flavors in the different varietals. Winemaking: The wines were aged in oak barrels for 18 months and then carefully blended to bring out the true character of the varietal. Tasting Notes: Classic aromas of blackberry and plum are wrapped in toasted caramel and dark chocolate and mouth-filling tannins. This wine has the structure you expect from Cabernet Sauvignon, but is also elegant and supple. Food Pairing: A fun start or end to any meal or friendly gathering. Enjoy with grilled flank steak, beef brisket, or portabella and grilled onion burgers as a vegetarian option. Varietal: 83% Cabernet Sauvignon 8% Merlot 4% Malbec 4% Tannat 1% Petit Verdot Aging: 18 months in oak barrels Total Acidity: 6.1g/L pH: 3.60 RS: 2.9g/L Alcohol: 13.9%
