2015 Vintage: The 2015 growing season started with a dry, mild winter and ramped up quickly from there. Similar conditions continued throughout the spring with summer months warming up, causing the grapes to fully ripen. The season ended just as it began, earlier than usual. After two previous vintages delivered large crops, 2015 hit the reset button with lower-than-average yields. The resulting wines deliver concentrated avors and bright, natural acidity. Winemaking: The wines were aged with oak for 18 months and then carefully blended to bring out the true character of the varietal. Tasting Notes: Classic aromas of blackberry and plum are wrapped in toasted caramel and dark chocolate and mouth-filling tannins. This wine is elegant and supple. Food Pairing: A fun start or end to any meal or friendly gathering. Enjoy with grilled ank steak, beef short ribs, or portabella and grilled onion burgers as a vegetarian option. Varieties: 82% Cabernet Sauvignon 9% Merlot 3% Malbec 3% Cabernet Franc 3% Petit Verdot Aging: 18 months with oak Total Acidity: 5.8g/L pH: 3.61 RS: 3.0g/L Alcohol: 13.5%
