Food Pairings for Th Sauvignon Blanc Leyda By Undurraga
This is a bright, lean Sauvignon Blanc. Initially it is refined and restrained on the nose, revealing clean aromas of ripe limes, grapefruit and blackcurrant leaves, sprinkled with subtle notes of green chilli pepper, fennel and gunpowder. It is fresh, concentrated and balanced, with a slightly mineral, salty palate, a soft texture and great persistence.
Notes: The grapes were carefully transported and rigorously sorted at the winery, ensuring that only ripe clusters free from rot underwent a short cold maceration followed by gentle pressing. Free run and lightly pressed juice was chilled to 8°C and cold stabilized for 48 hours. Subsequently the juice was racked to stainless steel tanks, where it was fermented at low temperatures (13°C-15°C) for 20 days until dry. A small fraction of the wine was fermented in used French oak barrels. This 8% of the blend adds complexity and roundness to the palate. After fermentation, the wine was left on its lees for five months prior to blending, with a weekly “battonage“ regime lending the wine more body, weight, and ageing potential. The final blend consists of 86% Davis clone 1, 8% French clone 107 and 6% French clone 242.
