It is called “Mise En Place” to reflect the preparation and diligence exercised in the vineyards and winery. Cabernet Sauvignon for "Mise En Place" comes from two very special single vineyard sites located on the extreme eastern and western sides of the Oakville District abutting the rugged and dry Vaca Mountain Range. This sub-section of the Oakville AVA is renowned for superb, richly-textured Cabernet Sauvignon. The Textbook vineyard is actually neighbors to the Screaming Eagle Vineyard and down the road from Joseph Phelps' Backus Vineyard and Rudd Vineyard; about as prime a piece of vineyard land as you'll ever see. Yields are very low, less than 2.5 tons per acre. Hand harvested and hand sorted the grapes slowly ferment for 19 days before going into barrels. 100% French Oak fro 22 months before hand racking and egg-white fining.

A big, bold Cab, Steve Tanzer scored it 91 saying "Glass-staining ruby. Pungent aromas of blackcurrant, cherry pit, vanillin oak and cured tobacco. Densely packed and energetic, offering sweet dark berry and cherry compote flavors and notes of vanilla bean, mocha and licorice. Picks up a smoky oak quality with air that lingers on the very long, precise finish. Concentrated, polished Cabernet with the structure to age." Only 300 cases produced. Extremely Limited!

Winemaker Notes - Superb, mature mid-valley sites in prestigious Oak Knoll, Yountville, Spring Mountain & Oakville District AVA's. Exemplary sustainable farming practices provided beautiful clusters with perfect flavor and balanced maturity. Classic Bordelaise winemaking (handwork in vineyard, modest new French oak barrels, egg-white fining) partnered with Merlot provides a bold but balanced result.
