Winemaker's Notes:

Our Syrah "drinks well", and it "plays well with others" when paired with most of the foods that we like in Texas, especially rich with the lighter meats and salads because it holds its acid nicely. Third in our "artist series", Benini’s creation called "StarTime" graces the label and the wine matches the elegance by giving layers of flavor like Benini brush-strokes on canvas. Soft tannins with the taste of dark berries and spice, and just a hint of black pepper at the finish.

This means that we use the least amount of chemicals as the Texas Hill Country will allow. We use turkey compost to fertilize and remove weeds with a mechanical devise called a "French hoe." Texas Hills Vineyard has always championed environmentally correct ways and works to protect our environment by growing the vineyard in a sustainable organic fashion. This means that we use the least amount of chemicals as the Texas Hill Country will allow. We use turkey compost to fertilize and remove weeds with a mechanical devise called a "French hoe." We are occasionally forced to use a few fungicides, especially after the temperature reaches daytime highs over 90 degrees, and sulfur and copper — our natural fungicides — are no longer as effective. Black berries with a nice spiciness to it. Hints of black pepper to the finish. Rhone style that attempts to be old world but a certain fresh berry characteristic shines through.
