Color: Ruby red when young with a tendency to garnet red after aging. Smell: Characteristic vinous, delicate scent. Taste: Dry, full bodied, slightly tannic with marked acidity. After proper aging full-bodied and harmonious. Food: Tasty soups - white meat and fowl in aromatic stews - grilled red meat - eel, cod and stockfish - fish soup aromatic - mature cheeses.

We just purchased a case from Italy and i'm afraid that the "rose and anise scented aromatics and deep flavors of cherry, orange peel and subtle green herb tones." are gone... Only traces of them left leaving the "barrel" to prevail.
