Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

The nose opens with bright fruit, currants, spice, bittersweet chocolate, cedar and lead . Jubilant fruit and bright cola berry follows with notes of caramel, dried fig and sweet cherry tannins. Will age nicely for the next 5-7 years.

A beautiful estate Cab as usual from Terra Valentine. Perhaps not in the top league of vintages, but fine and opulent, with blackberry, black currant, mineral and oak flavors. Now, with decanting, and through 2012. - S.H. Intense, with spicy, loamy earth, mineral and pebble notes mixed with dried currant and blackberry fruit. Full-bodied and tannic, yet the flavors push through on the finish. Drink now through 2016. 5,586 cases made. -JL A reasonably decent value in Spring Mountain Cabernet Sauvignon is Terra Valentines 2006 Cabernet Sauvignon. Licorice, forest floor, roasted herbs, black currants, and damp forest notes make for a complex set of aromatics. The wine is solid, medium-bodied, and spicy, with light tannin in the finish. Drink it over the next 7-8 years. ** Only 10 in Stock **

Winemaker's Notes:

Vintage Notes: 2006 was one of the wettest in recorded history on Spring Mountain reaching 100 inches in some areas. The cold wet winter delayed bud break to mid-late April and though the fairly warm spring conditions provided some catch up, bloom and veraison were also delayed resulting in a later than normal harvest. The summer conditions were similar to 2005 with average temperatures in June and warmer than normal conditions in July, but July was even more severe than the previous year with 13 days approaching or broaching the century mark, and one weekend that recorded temperatures of 113 and 110. Some sunburn resulted from those very hot days, but it was early in the growing season and the vines responded with little or no damage. August and September were idyllic and maturation proceeded smoothly through those months setting up perfect harvest conditions in October and a bit into November. (taken from www.springmountaindistrict.com). Winemaking Notes: This lush Rose was harvested primarily from the Wurtele Vineyard (95%) with a bit from our Yverdon Vineyard (5%) over a two-day period at the tail end of October. We gave it 6 hours of contact with the skins before being barrel fermented for 3-4 weeks. It was aged for 6 months surlie in neutral French oak barrels. We filtered to ensure a crisp, clean wine. Vineyard Notes: The Wurtele Vineyard, originally planted in the early 90's, is comprised of 35 acres planted to 100% Cabernet Sauvignon, ranging in elevations from 800 feet to nearly 1000 feet with 360 degrees of exposure and two different soils: volcanic soil and sedimentary rock. In 2001, Terra Valentine began the 2nd phrase of our development of our property: the renovation of the historic Yverdon Vineyard. We planted 8 acres of cabernet sauvignon and one acre of merlot at an elevation of 2000 feet located only yards away from Villa Valentine. 2006 is our third harvest from this vineyard. Tasting Notes: Strawberry jam and mint fill the nose. Watermelon with a hint of earth follows with a burst of cherry fruit. This Rose is big and juicy and ready to drink on your hottest of summer days.
