Terra Savia Blanc de Blancs Sparkling Wine 2007

Winemaker's Notes:

Our sparkling wine program started with a common passion for drinking fine bubbly. When asked by one of our partners if we could make sparkling wine, I replied “yes we are allowed”. My next thought was “other than to have some to drink, why would we want to get involved in such an elaborate production”. This is not the most profitable niche in the wine industry. If you have an understanding of how “Methode Champenoise” sparklers are made, (fermented twice, aged extensively, expensive packaging etc.) then you would understand the passion needed to embark on this adventure. Well... we seem to have it. We decided to be very idealistic and make the kind of sparkling wine we like to drink; dry, crisp, and citrusy. We also decided to make just enough for us and maybe some of our best customers. Our Blanc De Blancs is made exclusively from our organic chardonnay from our Hopland, Mendocino County vineyard. We harvest early while the grapes yield juice reminiscent of lemon meringue pie. The resulting cuvee are crisp and clean with lemon zest aromatics. Once bottled and fermented in the bottle we allow the wine to stay on the yeast for a minimum of 30 months. The goal here is to add a subtle yeasty quality similar to the smell of fresh baked bread. These wines will age well into the next decade and they reveal more of their lemon meringue origins. Vintage to vintage there is very little variation in our Blanc De Blancs thus far. We are very happy with our results and will continue with this passion driven project for many vintages to come.

From K & L Wine Merchants: "This is Terra Savia's first sparkling wine, a blanc de blanc, made by Jim Milone from organic Chardonnay grapes grown at Sanel Valley Vineyards in Mendocino.Made in the tradtional methode champenoise and was disgorged in September 2009. Crisp with hints of brioche and citrus, this blanc de blancs has a slightly leesy texture with the acidity to stand up to the richest foods."

I love this wine. It is crisp, yet complex and just lovely for a sparkling wine!
