What to Expect

Pedro Ximénez is a grape that is rarely used to produce a dry table wine, but is used to produce many of Spain's finest sweet Sherries. As a table wine it is high in acid and rather light but when the grapes are used to make Sherry, frequently referred to simply as PX, the wines gain incredible deep, rich flavors of figs, raisins, molasses, nuts and chocolate.

First off I'd like to say this is the first Sherry I've had at all, let alone Cream Sherry, so I may be a little biased about this, with that in mind...

Very very sweet wine, almost syrupy in consistency with a heavy maple syrup and a slight sweet cream taste.

Both Nick and I agreed this would be a good wine to cook with, possibly use for making tiramisu, but not really one you'd want to drink, just simply too sweet.
