What this type of viticulture does is make one more aware of the cycles, rhythms and life forces of not just the vine but the other flora and fauna that are part of the ecosystem. This study also influences the way we approach this wine, always looking for definition, depth and harmony. This rich offering would do well to be consumed with a truffled filet of beef.
