We're no etymologists but would it be fair to say that Tannat may have the name it does due to the tannins in the skins. Yes, the tannins are firm but boy are they good with anything meat based (especially grilled). So, go ahead, bring out the grill and sneak it on to your fire escape or rooftop and enjoy.
