'This has become one of my favorite wines to make eachvintage. I taste through the individual lots of all the tangentvarieties, plus a few 'extra' wines. I then make a few differenttrial blends. The wine seems to take on a life of its own duringthis process, and I very soon arrive at the final blend. It is anexotic wine, strongly inspired by the wines found in the Alsaceregion of France. It is very aromatic and flowery, a touch sweet,and wonderfully refreshing. Try it with any spicy food.'
...Each varietal brings something special to the fi nal Ecclestone blend. Together the Pinot Gris and Riesling offer minerality and a pine-sap character; the Viognier and Pinot Blanc add hints of lychee and apricot; the Albariño shows its signature citrus and tangerine aromas and flavors; and of course the Muscat Canelli adds orange blossom notes.
