Region: Victoria (Pyrenees 100%) Variety: Shiraz 70% Cabernet Sauvignon 30% Aging: 8o% in new French oak barrels for 20 months Winemaker Comments Colour: Deep Magenta colour. Nose: Immense fruit flavours of blackberry and blueberries coated with inviting dark chocolate, mocha aromas and hints of cedar spice. Palate: The wine opens with an array of mouth-filling flavours that combine all the black and red fruit characters of Shiraz and Cabernet. Layered with velvety smooth tannins and creamy vanillin, Cephas 2002 has a lingering well-balanced finish. Serving and cellaring suggestions Cephas 2002 would be best enjoyed after 5-7 years cellaring; however the sublime harmony and balance of this wine also allows Cephas to be enjoyed now if married with the right dish. Decant for 1-2 hours prior to serving. Match with thyme crusted Chateaubriand and Bordelaise sauce. Wine Analysis Acid: 6.3g/L pH: 3.56 Alcohol by volume: 14 % Harvested / bottled: April 2002 / February 2004

Crisp vibrant and juicy, with raspberry, cherry and clove aromas and flavors lingering on the fine-grained finish. Best from 2007 through 2012. 190 cases imported. Wine Spectator. A Proprietary Blend wine from Victoria in Australia. 2002 Taltarni Cephas 750ml
