Tablas Creek makes a big, rich earthy syrah with plenty of spice which shows what the Perrin Family, proprietors of Chateau de Beaucastel and Robert Haas of Vineyard Brands can do with the Terroir of Paso Robles. Using old world know how and new world terroir they produce a wine which is the perfect blend of the two. The wine drinks well by itself but it also the perfect foil for rich roasted meats, game or lamb.

Cream of the crop. Most excellent and destined to improve. I can't tell you what it tastes like because it's just too good for words. Oh, all right, it's a thick chalky sludge that suggests black fruit, compost, pepper, grass and tar. The flavors are compact, condensed, almost hidden, waiting to burst out someday in an orgy of sensation. Drink it now for the exciting pleasure of knowing that greatness is in your mouth but wait a few more years, if you can, for the full monty.
