Winemaker's Notes:

This Sumptuous Bordeaux-Style red blend is an easy-drinking, medium-bodied stand 0ut! Aromas of cherries and chocolate create an alluring nose that immediately draws you in. On the palate there is an abundance of black fruit with undertones of cocoa and white pepper. Notes of black cherry and just a hint of eucalyptus linger on the finish. Enjoy with hard cheeses, savory roasted meals or hearty pasta dishes. Most of all enjoy this with friends and family! The grapes were harvested in September 2007 and yielded 4.0 tons per acres at 24.5 Brix. The grape clusters were gracious and produced 155 gallons of grape juice per ton, providing plenty of concentrated flavors in the finished wine. We crushed and de-stemmed the grapes into open top 1 1/2 ton fermentors. After the must warmed to 52 degrees F, the bin was inoculated with BDX cultured yeast. BDX is used to optimize color and structure with soft tannin extraction and increased mouth-feel. Lower fermentation temperature contributes to varietal fruit character and enhanced complexity. Primary fermentation lasted eleven days then we pressed the must into 2,500 gallon tank. The wine settled for two days before racking into barrels. The wine was inoculated with OENOS cultures to start the secondary malolactic fermentation.
