Winemaker's Notes:

Rubeckia is a White Blend. This is a perfect "anytime wine". Light and fruity with aromas of tropical fruits and citrus blossoms. Bright flavors of pineapple, honeydew melon and pear with a hint of vanilla entice your palate - followed by a lingering clean, crisp finish. A perfect complement to crab, shrimp, creamy pastas and most coastal cuisine. The Chardonnay grapes from Santa Barbara County were harvested on October 5, 2009, and yielded 5.0 tons per acre. The grape clusters were gracious and produced 154 gallons of grape juice per ton, providing plenty of concentrated flavors in the finished wine. The Chardonnay was whole cluster pressed into 300 gallon tank and cold stabilized for 24 hours before racking into barrels where the primary QA23 and M2 yeast were added directly to the juice. These strains are specific for developing the aromatic production of fresh fruity aromas and blossom notes in the finished wine. After primary fermentation finished the wine was inoculated with CH35 cultures to start the secondary malolactic fermentation. The Chardonnay was aged in barrels for 9 months. This base wine represents 77% of our blend. The final wine was created by adding these component wines and blended before bottling: Muscat of Alexandria (20%) from Fresno County was harvested on September 14, 2009 at 24.8 Brix. Pinot Gris (3%) from Paso Robles was harvested on September 21, 2009 at 25.5 Brix.
