Suavia Soave Classico Superiore 2007

This is an interesting mineral-driven wine, but there's also lots of lemon flower, white peach and blanched almond character, with a hint of fresh ginger. Medium- to full-bodied, with bright acidity. Drink now.

Fresh pear scents fill the aroma of this wine and ghost the finish. It feels juicy and light, with a cool acidity that keeps it clean. For pan-seared fillet of sole.

(95% garganega with 5% trebbiano di Soave) Light straw-yellow. Green apple and yellow plum aromas complicated by an intriguing hint of lemongrass. A touch herbal on the palate, where bright acids give lift to the modest apple and pear flavors. Finishes moderately long, with a hint of almond.

Suavia's 2007 Soave Classico shows the complexity and character of this hillside site in its ripe yellow fruits, smoke, earthiness and minerals. The wine was very closed and reticent at the outset so I recommend opening it 30 minutes before serving to give it some air. Alternatively a quick double-decant should do the trick. This is a generous, full-bodied style of Soave that is sure to find many fans. Anticipated maturity: 2008-2010.
