The bouquet blossomed like a purple rose as the wine opened and became richer, fuller, and even more vibrant. A voluptuous mouthfeel with a memorable finish.

THE wine to pair with food that is cilantro heavy, Serrano peppers, achiote, red onion, lime, fresh tortillas, sour cream, cotija cheese, steak / chicken . Opened a bit tight but 15 mins in decanter had mid palate develop more. Got deliciously sweet with increasingly spicier food. We enjoyed with Tapas style small plate street tacos. Awesome. Strawberry & Grape candy , a mild tannic pull, medium length finish.

This wine displays a deep ruby color with rich aromas of cherry and blackberry and a hint of coffee. The mouthfilling flavors of ripe black and red fruits, laced with spice, persist through the lengthy finish. Silky, ripe tannins structure the wine and contribute to the plush texture on the palate.

VINTAGE: 2014 was a wonderful vintage for the Napa Valley along the lines of the recent outstanding vintages of 2012 and 2013. Although California’s drought brought another dry winter, the growing season started with a warm, dry spring and relatively early bud break. Summer temperatures remained mild and consistent with even, warm temperatures throughout. The overall outstanding quality and fruit characteristics in this vintage will make Bordeaux varietals, such as Cabernet Sauvignon, the highlight of the season. Grapes for the 2014 Napa Valley Cabernet Sauvignon were harvested between September 12th and October 16th. VINEYARDS: Cabernet Sauvignon reigns king in the Napa Valley and the appellation excels in producing outstanding expressions of this admired varietal. Napa Valley offers an ideal combination of topography, geology and climate that enables this varietal to reach optimum ripeness, balance and finesse. For the 2014 Napa Valley Cabernet Sauvignon, the grapes come primarily from the warmer valley region of Calistoga including the Diamond Mountain Ranch, Bear Flats and Tamagni vineyards. The Calistoga appellation is one of the warmest areas in the valley but has extreme diurnal shifts, allowing the grapes to enjoy very cool nights which help maintain excellent acidity. WINEMAKING: Each lot is kept separate until the final blending, allowing the winemaker to select the most expressive and unique barrels to bring together in the final blend. Each of these lots was aged for 18 months in combination of American (56%), French (30%) and European (14%) oak barrels. Once ready, the barrels are tasted and only those reflecting the true hallmarks of the Napa Valley are selected for the final blend. TASTING NOTES: The Sterling Vineyards Napa Valley Cabernet Sauvignon is a brooding, dark garnet-red color in the glass with big fruit aromas of blackberry jam, ripe plum and notes of cassis. The nose leads to a full-bodied, concentrated, richly textured palate with flavors of dried black cherry, warm caramel and a pleasing umami character. The wine is dense and offers striking fruit intensity balanced with good acidity and fine, well-integrated tannins. The wine is seamless and offers a lengthy finish that hints at its ability to age for at least the next 10 to 15 years. Intense aromas, led by toasty oak and spice, unfold with layers of cardamom, cedar, dark chocolate and anise over briary fruit. Velvety, plush and round, the palate delivers style and sophistication with enjoyable, rewarding accessibility. Layers of red fruit, brown sugar, and black licorice are joined by chocolately tannins that melt into a long finish. The cooler vintage left a lift of acid that makes it perfect for pairing with food. Try with a hearty mushroom tart, roasted pork loin or grilled meat. - Winery

Sterling Vineyards Napa Appellation wines come from 14 diverse vineyards in this world-famous region, from the Carneros District in the south to the northern reaches of Calistoga. Wine: Our 2012 Napa Valley Cabernet Sauvignon is a great illustration of this vintage, offering ripe, brambly fruits on a fleshy and broad canvas. The warm, dry conditions of the year allowed bold flavors and big tannins to develop, unfolding with boysenberry pie and fragrant baking spices. A burst of fresh fruit opens the palate, picking up red currants and hint of oak. Plush and long, the flavors span through the long finish, accented by a hint of spice. Vineyard: Framed by the Mayacamas Mountains to the west and the Vaca Range to the east, the Napa Valley extends from San Pablo Bay up to Mount St. Helena. Now they’ve released this Napa Valley Cab from the outstanding 2012 vintage. Grapes are sourced from their best growers throughout the Napa Valley. It's a complex blend of 86% Cabernet Sauvignon, 5% Cabernet Franc, 3% Merlot, 2% Malbec, 2% Syrah and 2% Petite Verdot. Each lot is vinified separately to bring forward its unique profile and strengths. To achieve the rich color and aromatics, the grapes are cold soaked for two days, followed by fermentation. Frequent pump-overs allowed plenty of contact between the juice and the skins for maximum extraction of flavors. The wine is aged 15 months in French, American and Hungarian oak and the final blend is made prior to bottling. This wine is a great illustration of this excellent vintage, offering ripe, brambly fruits on a fleshy and broad canvas.
