CASK 23, made only in exceptional vintages, is usually a blend of the most distinctive fruit from Stag's Leap Wine Cellars' S.L.V. and FAY estate vineyards. But now, thirty years after a bottle of Cabernet Sauvignon from S.L.V. won the legendary Paris tasting, they return to this vineyard as the sole source of inspiration for the 2003 blend.

The clarity was striking. Dark and heavy in the glass and shouting purity. I would say that the nose was nice. Good aromas of dark cherry and blackberry moving into a floral bouquet. It was something to sense it move from one to the other and back. The mouth had a heavy but not too heavy viscosity that allowed for it to coat the palate and make for an interesting study. To me it portrayed an earthy yet calming fruit that balanced nicely. Even though the acidity calmed down over the course of the bottle; it always maintained nice crispness to it. There was a cocoa coming out on the finish that was unexpected.
Only in meritorious vintages do we choose the most distinctive grapes from S.L.V. and Fay, our two estate vineyards in the Stags Leap District, and use them to create Cask 23, a proprietary red wine blend expressing exceptional elegance. Although S.L.V. and Fay adjoin each other, the two vineyards experience different growing conditions and produce Cabernet Sauvignon grapes with different flavor characteristics. The volcanic soils of S.L.V., of Paris Tasting fame, yield complex, multi-layered Bordeaux-like fruit elements, while the alluvial soils of Fay produce lush perfumes and berry flavors. Combining the fire of S.L.V. and the water of Fay can yield a wine of dynamic complexity. Aromas of roses and violets rise up in the glass, followed by cassis, plums, and blackberries, opening into clove, cinnamon and even a hint of tobacco. The palate is filled with sensations of black cherry, blackberry, blueberry, and candied orange peel in dark, dark chocolate. Tannins and acidity are there, but only as supporting structure that remains very much in the background. Serve with a well-aged steak topped with Bearnaise or a rich cheese-and-mushroom tart in flaky pastry.
The 1999 Cask 23 exhibits a deeper plum/garnet color with purple nuances. Vanilla, espresso, lavender, and sweet red as well as black currants emerge from, the stylish bouquet, which promises more than the palate delivers. The wins is medium-bodied, a bit angular, with austere tannin, excellent purity, but little depth and intensity. Anticipated maturity: nowndash;2011.
Warren Winiarski designed Cask 23 as a blend of Fay and SLV, vineyards with two kinds of soil: There's a wash of loam at the base of the hills, and volcanic rock up on the ridges. Winiarski thinks of this Cabernet Sauvignon as a blend of "water blocks" (loam soils giving smooth, supple character), and "fire blocks" (volcanic soils providing a more intensity, fiery side). In this '98, you can practically smell the astringency in the aroma, the blackness of plum skin, the deep chocolate texture of the tannins all seeming to create a black veil to the richness of the wine. Nothing is revealed, and yet the wine is immensely generous. To gain access to the wine, you'll probably need to wait a decade.
Like the S.L.V., this wine keeps developing with air, and needs plenty of it to begin to show itself. Cask 23 is so intense and wrapped up in its black and supple tannins that it's hard to perceive much beyond them at first. They give a youthful green spiciness, a tight leanness of flavor that has yet to grow into the sumptuous texture. But the character of the wine is there to taste, slightly old-fashioned, whetting the appetite for boudin noir with apples even now. Better to put it away for a decade and find out what it has become.
Warren Winiarski's Cask 23 and SLV Cabernets are often slow starters, then come back to surprise and delight. These two wines from the '92 vintage are no exception, sharing similar flavor profiles, the Cask 23 painted on a larger canvas. The Cask 23's aromas are more exotic, possessing as they do more facets to explore. There is a keynote of blackberry with the wild cherry overtones found in the SLV, and they carry over to the palate. The middle palate impression needs to fill out, as it may well, and tannins need to resolve, all this being perhaps five years away. As always, "Cask 23" is a beautifully and intelligently made wine.

Starts out with an earthy, mulch, loamy character before revealing its core currant, sage, herb, and bay leaf flavors, along with hints of espresso. It also shows considerable tannic strength, finishing with a dry, mineral quality.
The estate's flagship wine, the medium-bodied 2001 Cask 23 exhibits notions of berry fruit intermixed with spice, coffee beans, herbs, and a touch of the cow dung component. While the attack is attractive, the wine narrows out and concludes with an angular, uninteresting finish. It actually performs less well than its two siblings, which is hard to understand. It will age for 10-15 years, but this 2001 in no way recalls the great Cask 23's of the seventies and early to mid-eighties. What a shame!
