Hubert de Castella named the St Huberts Vineyard not after himself, but after his patron saint. Born 655 AD as the eldest son of Duke Bertrand de Toulouse, Hubert became a count at the age of twenty. Envy of his purity forced Hubert to flee for his life to the eastern territory of the Franks, ruled by his uncle, Pippin de Heristal. Hubert assisted his uncle to gain victory in the battle over Theodorich and eventually married the Prince's daughter Floribana. Following the death of Floribana, whilst giving birth to their first child, Hubert sought comfort and distraction on lonely hunting forays. One Christmas Eve, rather than attending Christmas mass, St Hubert was out hunting. On this hunt he encountered the wondrous image of a stag carrying a shining cross between its antlers. He heard a voice tell him that he would go directly to hell unless he mended his ways. Through this vision, Hubert was moved to transform his life by distributing his wealth among the poor, he then renounced his dukedom, entered a seminary and was ordained a priest. He founded several monasteries in self sacrificing missionary work in the Ardennes, his earlier hunting grounds, until his death in 727 AD in Teroueren. His earlier passion for the hunt as well as the central incident in his life - the encounter with the stag - made Saint Hubert the patron saint of all hunters. In tribute to his patron saint, Hubert de Castella decided that the wines of the St Huberts Vineyard would bear the emblem of the stag with the cross between its antlers, a tradition that continues to this day. Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.
