WINEMAKER’S NOTES The awesome 2005 Cabernet Sauvignon enjoyed a remarkable 6-day soak as well as a 6-day maceration on its skins. While the tannin is high, it is barely noticeable given the wine's extraordinary richness, concentration, and seamless texture. The opaque blue/purple color is followed by spectacular aromatics consisting of crème de cassis, mocha, cherries and blueberries. This deep, opulent, full-bodied, profound 2005 will rival the Sympa Cabernets from 2001, 2003, and 2004. Anticipated maturity: 2010-2025. Sympa, which is already a so-called "cult" wine, seems to have pushed the envelope of quality even higher ... as hard as that is to believe. As always, the truth is in the bottle. Not yet released. St. Helena Winery produces traditional, hand made wines. In fact, the only piece of equipment which is mechanized is a commercial-grade, Delta E1 de-stemmer. The wine is not pumped, nor is it stored in stainless steel fermenters. St. Helena Winery produces traditional, hand made wines. In fact, the only piece of equipment which is mechanized is a commercial-grade, Delta E1 de-stemmer. The wine is not pumped, nor is it stored in stainless steel fermenters. Upon harvest, grapes are sent through the de-stemmer then sent to the sorting table to remove any fruit that is not whole and healthy. (If wineries even go to the trouble of hand sorting fruit, it is typically done prior to de-stemming.) The fruit is moved by hand into a small plastic, one ton fermenter (rather than a steel fermenter). The Storys hand punch down the cap and do not use any mechanized pumps. A traditional wooden basket press uses a water-inflated balloon to press skins against the press. Sympa is made from only 100% free run juice, while Scandale uses some of the pressed wine. As with the crushing process, St. Helena Winery's cooperage regime is similarly traditional. The wine is moved by hand into all new French oak barrels from five cooperages, using "heavy" and "medium" toast levels. All wines are aged on-site. Read less

Favorite of the four I tasted today. Intense and deeply concentrated currant with some herb notes. Shows some grace now, but with more cellar time should be even more supple and complex. A fantastic cab! They say best now through 2013. This venue has it for $65, which is lower than I see it on here for, so it sounds like a deal I may have to act on! - Tasted at Marche` Bacchus 8/8/09

Didn't show as well for me today. I think it's still far too early to be enjoying this, as it's tight and reserved and tannic now. It's very rich and concentrated, but wait on it. - Tasted at Marché Bacchus 2/6/10

Big wine, very masculine. Should pair up nicely with steak, lamb. Decanting highly recommended. Stacks up well next to more pricey cabs.
