Winemaker's Notes:

Grape Variety100% ShirazColourMedium intensity, ruby red with purple tintsBouquetA complex nose of primary fruit including cherry, blackberry and plum, coupled with liquorice, and mocha characters of chocolate and coffee. Hints of smoke and cedar from the oak.Palate The complex array of flavours continues across the palate with concentrated cherry and plum fruit, leading into chocolate, vanilla, smoke andfine grained tannins. This rich tapestry of flavour, seamless structure and velvety texture culminates in a wine that is rich, concentrated and balanced. Serving SuggestionDecant 2 to 3 hours prior to serving. Excellent with rich red meat and game dishes. Perfect with firm full flavouredcheeses like cheddar or Parmegiano Reggiano.CellaringOld Block Shiraz is silky smooth on release and will reward careful cellaring for 15+ years. VinificationFruit was harvested from late February through to early May. Each batch was fermented in tank at relatively warm temperaturesof 20 -24ºC, which aided colour and flavour extraction from the skins. The ferments were managed by a variety of techniques including “pumping over” and “drain and return”, again to enhance colour and tanninextraction. Some parcels were pressed off skins early, finishing off fermentation then seeded with malo-lactic culture in oak. Other ferments once dry were pressed off the skins and then seeded with a malo-lactic culture in tank. Parcels were matured in a combination of new, 1, 2 and 3 year old American (70%) and French (30%) fine-grained oak barrels for 20 to 24 months until blending for bottling.Old Block Shiraz is release after 12 months bottle aging.Technical DetailspH 3.37 TA 7.5g/L Alc 14.5%
