At St. Barthélemy Cellars, we strive to make ports that showcase the wonderful fruit flavors of the many grape varieties grown in California. Our goal is to produce varietal ports with lower residual sugar levels so that the grape’s natural and unique varietal characteristics are not masked by an overly sweet quality. Traditional Ports usually have a residual sugar of 12-14% whereas our ports are 5-8 % residual sugar. We have succeeded in creating a portfolio of seven premium varietal ports; Barbera, Cabernet Sauvignon, Merlot, Petite Sirah, Pinot Noir, Syrah, and Zinfandel, with additional varieties to be released in the future. All of our ports can be enjoyed with a wide range of food pairings or simply savored on their own. Rich and full-bodied, each wine’s flavors are enhanced by the aged brandy and low residual sugar. A burst of flavors hits your mouth up front, especially spicy black pepper. A complex combination of spicy cloves, cherry, black licorice, and cocoa is followed by a clean finish. The Syrah is nicely paired with mild curries, blackened fish or meats, and milk chocolate, or just sit back and enjoy the ever-changing flavors.

This inky dark port clings to the glass. The aromas of raspberry truffle, chocolate, brown sugar and nutmeg all fuse together while the rich flavors of cherry, blackberry and dusty cocoa make it a great companion for dark chocolates and cigars. The richness of this port makes it a good match with Pacific Rim Cuisine or flavored goat cheeses such as the chocolate Capri Log or Cranberry Chevre with Cinnamon from www.igourmet.com.

cherry, cherry, cherry is what this pleasing port is all about. Flavors of cassis and vanilla are nicely integrated with the cherry for a long and lingering finish.
