Spottswoode Cabernet Sauvignon 2006
Deliciously aged in my cellar for 3 years. The bouquet, sensually stimulated the nose like a freshly cut purple rose. Full bodied and luscious, a wine of distinction and paired nicely with my 38oz Steak.

The 2001 Cabernet Sauvignon Estate is a 4,300-case blend of 95% Cabernet Sauvignon and 5% Cabernet Franc according to winemaker Rosemary Cakebread. A blue/purple color accompanies a gorgeous perfume of crushed rocks intermixed with blueberries and black currants as well as subtle touches of toasty oak and white chocolate. A classic example of power allied with elegance, it possesses undeniable finesse yet tremendous flavor intensity without being heavy. This beauty is one of the most provocative and intense efforts of the vintage, yet it is strikingly delicate for its concentrated personality. Give it 2-3 years of cellaring, and drink it over the following 14-15.
A dazzling wine, sleek and sophisticated, with beautiful ripe fruit purity. It has rich currant, crème de cassis, light mocha and herb shadings and a silky-smooth texture that firms on the finish as the tannins make their presence more evident. Drink now through 2014.
Decidedly herbal, with moderately ripe currant, earth, sage and wild berry flavors, too. Drink now through 2005.

This beauty maintains a pleasing balance between the sheer power of its well-ripened cherry and blackberry fruit flavors, and an earthy quality grounded in firm tannins and good acidity. Totally balanced, dry and harmonious, this Cab exudes elegance and style. Drink now-2015.
The 1,850-case cuvee of 2004 Cabernet Sauvignon Estate (97.3% Cabernet Sauvignon and the rest Cabernet Franc) boasts a deep ruby/purple color as well as a beautiful nose of lead pencil shavings, violets, blueberries, and black currants. It builds incrementally on the palate with superb purity, medium to full body, sweet tannin, and a long, 40+ second finish. This beauty can be drunk now or cellared for two decades.
Ripe and spicy with intriguing gaminess, the '95 Spottswoode has a juicy texture and fine acidity. However, the tannins are very firm and dominate from mid-palate on. Hold this wine for at least two years - preferably more - to let it mellow, then enjoy with a robust meal of sautéed duck breasts with mushroom timbales.
The 2006 Cabernet Sauvignon, which has taken on much greater complexity and intensity since I tasted it right after bottling, is largely all Cabernet Sauvignon with just a small amount of Cabernet Franc in the blend. The owner's daughter, Beth Novak, and her assistants, Rosemary Cakebread and Jennifer Williams, made an intelligent decision in bottling this wine later than normal to resolve some of the tannin issues, and they have certainly succeeded. This wine, which I believe will evolve for 25 or more years, has a gorgeous nose of violets, black currants, licorice, camphor, and a hint of graphite. Layered, rich, and full-bodied, the wine has an opaque purple color as well as wonderful purity and balance. It could be considered the wine world's version of haute couture at a top address in Paris. It's a beauty, perfectly balanced and as flawless and seamless as a 2006 Cabernet Sauvignon from Napa can be. Drink it over the next 25 years.
