Food Pairings for Souverain Cabernet Sauvignon
Scent is earthy, with berry and green wood notes. Dry, dark cherry flavor with a powdery finish.
Nice full bodied yummy CA Cabernet. I would guess that this one can really handle some cellar time. Tannins were very present and took a while to settle. Chocolate, cardamom and vanilla lingered on the palette. Definitely needs a decanting. I'd buy this one again.

Excellent. Big taste. Good Finish. Not too dry. Dark fruit, plum and black cherry. Great Value, my friends and I are drinking alot of this.
We love this wine. It's as good if not better than some of the more expensive wines we drink. Our friends love it too.
I really enjoyed this wine, it is one of my favorites. A lot of mocha and chocolate, rich berry and a smooth velvety texture. It did have a long finish but I thought it was yummy so I didn't want it to end :)

The dark ruby/purple colored 1997 Cabernet Sauvignon displays an excellent black currant, dried Provençal herb, toasty oak, and sweet black fruit-scented nose. The wine possesses tremendous fruit, medium to full body, low acidity and a soft, succulent texture. It is a delicious Cabernet to drink over the next 7-10 years.
Ripe and rich, with firm plum, herb, black cherry and spice flavors that are sharply focused, long and rich on the finish. Has the tannin for midterm cellaring. Drink now through 2006.
As a result of a long, cool growing season, this elegant Cabernet Sauvignon shows deep, dark color and chocolate and cherry-vanilla aromas on the nose. A round, supple mouth begins with black cherry and coffee that leads to subtle notes of dried herb, vanilla and bittersweet chocolate that lasts throughout a long oak finish.

Ready to enjoy now, the 1996 Cabernet has rich, concentrated flavors of currant, blackberry and coffee, harmoniously balanced with well-rounded tannis and toasty oak nuances that also will develop with further cellaring.
A touch rustic and firmly tannic, it offers a range of earthy currant, anise, herb, sage and cedar flavors that are well-proportioned. Drink now through 2006.
Both the 2005 and 2006 Cabernet Sauvignon Alexander Valley are straightforward, easy-going, mid-weight, pleasant efforts to drink during their first 5ndash;7 years of life.
