The Evolution of Celebration. It is written nowhere that sparkling wine is only for special occasions. Therefore: Celebrate everything all the time! The great sparkling wines of the world are blends or as the French would say, "Assemblage," of multiple grape varietals, from multiple vintages, with different oak treatments, and differing levels of Malic Acid. These wines are blended to make a complex sparkling wine that matches the taste profile desired by the winemaking team. With this in mind, Sokol Blosser has thought for many years that Evolution (a blend of nine white wines) would make an amazing base wine for a production of a true, method champenoise, sparkling wine. So here it is - Evolution Sparkling! Pair Evolution Sparkling with chicken nuggets or chicken Cordon Bleu; with fish sticks or Cedar Plank Salmon; with double-cheese nachos or double cream Brie. Lightly nutty, honeyed aromas of green apple and peach. Fresh and lively palate with zesty citrus notes of tangerine, grapefruit and lemon with some stone fruit coming through as well, soft mousse and bright acidity make for a fun, easy drinking selection

COLOR Straw AROMA Aromatics of apricot, green apple, Bosc pear and hints of white peach and citrus. TASTE The mouthfeel is slightly creamy from the secondary fermentation in the bottle, with a light flintiness. Dry on the palate, it finishes crisp and clean.
