Food Pairings for Six Bottles of Elderton Command Shiraz
Wow! The thickly layered nose, full of surprises over four hours, opens to black raspberries, oak, smoke, and a changing mélange of floral aromas. At one hour, add cherries, minerals, faint blueberries, and black pepper. At three hours, the aromatic complexity increases again to include currant, licorice, curry, vanilla, violet, honeysuckle, and rust, intermingling with wafts of deep, rich cherry, faint cinnamon, baby powder and dark chocolate. The nose on this gorgeous wine continues to evolve, creating harmonious combinations with variations on each theme. The palate is equally epicurean, hosting decadent combinations of dark fruits and spices in ever-changing blends. Intermittent notes of black raspberry, apricot, cherry, licorice, berry cobbler, and black pepper decorate the spectacular fare offered up like a five-course meal with trays of choices changing at each offering. The tannins are subtle participants in the evolving display, and a delightfully balanced acidity helps move the medleys along, sustaining each with a warm spotlight until the lengthy, succulent fade ushers one set off and brings in another right behind.

Dark purplish core with pinkish hue marked the end of the night with a much youthful wine. Excellent integration of bright acid and good tannins. However the nose felt like sweet raisins, chocolate and lastly, almost port-like. Not complex like an aged wine. Good powerful Oz style, but not something for everyone.
The second wine for the mini vertical tasting night. Similar liquorice note as the 1999 but carried a sense of earthiness with it. Soft acid with velvety soft tannins makes it a lot more structured and balance than the previous vintage. Short finish, but definitely more enjoyable.
This is totally voluptuous - dense fruit - almost brooding and a palate that goes on forever. What power, complexity underpinned with enveloping but not too pronounced tannins. An absolute classic.
This wine is seemless! The nose was a little restrained and understated It needed some time to fully open up. Gorgeous dark fruits washed effortlessly over the pallet. Velvety tannins that completed the etherial experience. Paired with a medium rare flatiron steak marinated in a red wine mushroom sauce. Outstanding! Can't wait to try the other bottles from the cellar.

Notes of vanilla smoke along with a touch of graphite and black olive grilled meats also appear. Classic barossa Shiraz on a medium weighted framework that highlights the smoke and black fruits. This is a sophisticated interpretation of what Barossa can be while still hewing to the richness that is typical of region s style. There s a soft finish hardly any tannin and the most deft acid levels to provide some elegance. Showing creamy textures with soft edges the finish showcases some lingering fruit on narrow tail that fades gently. A well made elegant soft edged shiraz that has juiciness without broad thick textures. Chuck Hayward.

2008 was a hot summer and one of the earliest vintages on record. The 2008 Command shows exceptional fruit weight, with more time French oak than in the past. It will be a long lived wine!
