This gentle, rich red has slightly volatile aromatics of peppermint over candied red fruit, a parallel to plum sauce for Hoisin beef.
Forward aromas of cocoa, cassis and bay leaf. Full and rich black cherry and plum fruit meet spice and sweet oak on the palate. Superb balance continues through a persistent finish.
This is a wine of pedigree. It shows in the exquisite acids and tannins and overall balance of its parts, including oak. The flavors are classic blackcurrants and cassis, with a nice edge of dried herbs. Not a blockbuster, it's probably best now.
Produced with mostly Stags' Leap fruit, this renowned Cab has just a touch of Cabernet Franc and Merlot, which adds complexity and cinnamon-like spice to the long finish.
The 2007 Cabernet Sauvignon is a gorgeous example of elegance allied to power. The final blend of 85% Cabernet Sauvignon and the rest Merlot, Petit Verdot, and Cabernet Franc offers up notes of crushed rock, spring flowers, red and black currants, and plum as well as hints of white chocolate and subtle barrique smells. Medium to full-bodied, with a nicely layered mouthfeel that builds incrementally, the wine has superb purity as well as accessability. It can be drunk now or cellared for 15 or more years.
The 2004 Cabernet Sauvignon possesses a dense ruby/purple color along with a sweet nose of creme de cassis and new oak, medium body, an elegant style, and an attractive finish. Drink it over the next 5-7 years.
