The two formed a partnership and co-founded Silver Oak Cellars in 1972 with the bold vision of producing only Cabernet Sauvignon. Today, under the leadership of Ray’s sons David and Tim and Director of Winemaking Daniel Baron, we produce two wines: our Napa Valley Cabernet Sauvignon and Alexander Valley Cabernet Sauvignon. Silver Oak’s unwavering focus on making exceptional Cabernet Sauvignon enables us to continually improve and refine our craft. Each of our two estates – one in Napa Valley and the other in Alexander Valley – is dedicated to producing a single wine. These two Cabernet Sauvignons consistently reflect the very best of their appellations. Our estate vineyards are ideally situated to provide optimal growing conditions for our Cabernet Sauvignon. We also work closely with top independent growers throughout the Napa and Alexander Valleys to ensure a reliable source of excellent fruit. We complement this fruit with grapes from top independent growers throughout both appellations, giving our winemaking team the flexibility they need to realize the full potential of each Silver Oak vintage. TASTING NOTES: Our 2012 Napa Valley Cabernet Sauvignon artfully combines the classic elegance of the old world and the ripe fruit of California. It displays an opaque garnet color with a bouquet driven by fruity aromas of blackberry liqueur and hoisin sauce. It also offers the savory components of sage and molasses. These complex aromatics are complemented by sandalwood and nutmeg characteristics indicative of American oak aging. This is a well-structured wine with a compact and rich mid-palate buttressed by silky tannins and generous acidity. Given proper cellaring, this wine will provide drinking pleasure through 2037. VINTAGE DESCRIPTION: The 2012 vintage was broadly described as being an exceptional growing season and a gift from Mother Nature. Not only were we excited about the great growing conditions, but also the innovative vineyard techniques like berry sensory analysis and precision farming we implemented in our vineyards. The dry winter was the beginning of the extended drought period in California, but well-timed rainfall in February and March, as well as two inches in mid-April, filled the soil profile before the coming season. Budbreak was even and bloom progressed quickly, leading to clusters with both high quality and high quantity potential. The summer weather was wonderfully cooperative, with only a single day’s high above 100˚F from May through the end of September before a short heat event on October 1st and 2nd. We began harvest on September 11th and concluded on October 19th, after which an inch of much-needed rain fell on October 23rd. Silver Oak is the standard bearer for Napa Valley Cab and has been for decades. For this, their Napa Valley bottling they source grapes from throughout the Valley. The 2012 vintage was outstanding in the Napa Valley. A blend of 80% Cabernet Sauvignon, 10% Merlot, 7% Cabernet Franc and 3% Petit Verdot Silver Oak takes two unique steps in their wine making process that make this wine different and exceptional every vintage. First, they blend the different vineyard lots before the wine goes into barrels for aging. This lets the fruit expression stand out with the natural elements coming into balance before the influence of oak. Then the wine is transferred to 100% new American oak barrels for 24 months of aging. The second unique step they take is after bottling they age the wine in bottle for a full 21 months allowing the flavors to fully integrate and the tannins to soften so upon release it's already nicely developed and you can clearly see the path it will take to maturity. This 2012 shows immense complexity and bold flavors. Vanilla, coffee beans and blackberries are buttressed by dusty tannins, firm acidity and a mouth-coating texture. Given proper cellaring, this wine should provide drinking pleasure for many years to come. California Wine Advisors scored this 96 points saying "This new vintage of Silver Oak’s flagship "Napa" bottling is a serious intense and full bodied new release. A bouquet of inviting black currant, boysenberries and espresso introduce a balanced palate offering notes of cassis, dark berries, plus hints of smoky oak and tobacco on the finish. Enjoy tonight (recommend decanting) or feel free to cellar for 5 – 7 years."
