Signorello Cabernet Sauvignon Napa Valley 2014

Notes: Our Estate Cabernet Sauvignon can be called Padrone’s favorite son. It inherited Padrone’s intense varietal aromas and concentrated flavor. Yet, because the grapes are sourced from several of our younger less rocky parcels with a variety of exposures, clones and soil types, it enjoys a softer tannin structure. This wine boasts full flavors that are intended to be enjoyed over the next 20 years. WINEMAKING NOTES: Our fruit is triple sorted before de-stemming, then fermented at 90 degrees in stainless steel tanks and pumped over twice daily. Gently pressed at zero brix and aged for 19 months in 80% new oak from Troncais, Nevers and Alliers and coopered into thin-staved, medium-plus toast Chateau Ferre barrels by coopers Tarransaud, Saury, Darnajou and Nadalie. To preserve fruit intensity and body, the wine was not fined or filtered prior to bottling. HARVEST REPORT: 2014 was another early and excellent harvest in the Napa Valley. The 2013/2014 winter was one of the driest on record in California and rainfall totals in the Napa Valley were approximately half of normal. However, the timing could not have been better: heavy rains in late February and early March gave a much needed drink of water to the vines as they were emerging from dormancy and about to begin bud break. An even fruit set created abundant yields; the third large harvest in a row with amazing quality and depth of flavor. Composition: 87% Cabernet Sauvignon 7% Cabernet Franc 6% Merlot Alcohol: 14.7%
