The Shiloh winery in Israel ages this classic kosher Cabernet in French oak wood barrels over a period of fourteen months. The wine is dark Bordeaux in color and tastes of rich black fruit and delicately charred oak wood. It is quite dry (much more so than a typical Cab) and finishes like a French Bordeaux. Decant this wine for about an hour or more before serving.

The color is shiny yet deep purple-red, and it's aromas evoke fresh black fruit, blueberries and cassis, with green pepper notes. The bouquet is delicate with scents of vanilla and toasted oak. The palate echoes black fruit, raspberry, blueberry and plums, its richness in tannins gives it a long and plesant finish.

This Cabernet is grown in Israel's Central Plains and is medium-bodied, smooth, and softened by 16 months of aging in oak barrels. The fresh fruit aromas also show a little green olive, providing a gentle hint of the Israeli terroir.
