Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Nose of rich red and black currant. Slight eucalyptus and a hint of oak. Big tannins with an almost gritty mouthfeel. Lots of black cherry, wild berry, tar, graphite and cedar notes. Elegant flavors and very ripe, fleshy tannins. Very black fruit flavors. Cedar, cassis and linzer torte toward the finish. Richly flavored.

[Steak] Opened the last bottle about a year ago. Decanted for 1 hr, drank over 2h. This time seemed even more extracted to the point of being syrupy. Cherry on the palate and huge tannins otherwise lacked depth. Decanted over night and so much more better: carmel, herbs, red fruit. If you are going to drink now plan in advance for some serious decanting. Will likely reassess in another 6 mos.

[Girl and the Fig, short ribs] Deep dark cherry color. On the nose, cassis, dark cherry, smoke. On the palate, cherry, smoke, cassis; later developed caramel. Huge tannins, tempered only some what by the beef. Great structure. Though it was fun to drink, it should be shelved for a minimum of 1-3 years. Should easily last for another 15 years. Had the opportunity to visit Steve Sherwin on the previous day. The best stop of the trip. Steve was extremely welcoming. He toured has through his property, which is stunning. And he walked us through his process--in fact he even broke out the punch down. After trying the 2002 and doing some barrel tasting, we walked away with a case. A great way to spend a day.

Opaque at the core with a dark crimson rim. The nose centers around black cherry, currant and anise with a slight hint of herbs, complemented by cinnamon, oak and tobacco. Mineral driven on the mid-palate, it offers notes of allspice, currant and sub... Alex Lallos. A Cabernet Sauvignon wine from California in USA. 2007 Sherwin Family Cabernet Sauvignon 750ml

Ultraripe, with a touch of sweetness to the red currant, black cherry and wild berry fruit and the alcohol stands out a bit. The texture is smooth and the tannins are ripe and integrated, finishing with a burst of ripe fruit... Wine Spectator.
