[Girl and the Fig, short ribs] Deep dark cherry color. On the nose, cassis, dark cherry, smoke. On the palate, cherry, smoke, cassis; later developed caramel. Huge tannins, tempered only some what by the beef. Great structure. Though it was fun to drink, it should be shelved for a minimum of 1-3 years. Should easily last for another 15 years. Had the opportunity to visit Steve Sherwin on the previous day. The best stop of the trip. Steve was extremely welcoming. He toured has through his property, which is stunning. And he walked us through his process--in fact he even broke out the punch down. After trying the 2002 and doing some barrel tasting, we walked away with a case. A great way to spend a day.
[Steak] Opened the last bottle about a year ago. Decanted for 1 hr, drank over 2h. This time seemed even more extracted to the point of being syrupy. Cherry on the palate and huge tannins otherwise lacked depth. Decanted over night and so much more better: carmel, herbs, red fruit. If you are going to drink now plan in advance for some serious decanting. Will likely reassess in another 6 mos.
