Sherry Dios Baco Amontillado Sherr NV

Winemaker's Notes:

Bodegas Dios Baco was founded in 1765 by the Vergara family and a British firm. In the early 20th century, Sr. Juan Vergara partnered with Sr. Juan Palomino to form the conglomerate, “Los Doce Disciples,” or the Twelve Disciples. The principal cellar amongst the original twelve was Bodegas Dios Baco. In 1992, the Paez Morilla family bought the property and began extensive renovations in the cellar and the vineyards and the property is currently managed by Jose Paez Morilla. Jose’s mission is to produce handcrafted, small-production lots of traditionally made Fino, Manzanilla, Amontillado, Oloroso, Cream and Pedro Ximenez. A fitting partner to tangy olives with preserved lemon, Jamón serrano or garlic and shrimp.

A hint of sweetness softens this full-bodied Amontillado. It evolves from caramel and toffee flavors to roasted almond and coffee as the sweetness gives way to a firm, dry finish. Drink now.

Rich and pure, with warm saddle-leather aromas as well as scents of toffee and hard cheese. The palate runs sweet and rich, with plenty of brown sugar and spice galore. As a whole it?s a rather forward and approachable wine that might lack some complexity but not exuberance.

Delicious Amontillado. Silky smooth, this packs a punch with its burnt caramel and roasted walnut flavors, ending on a smoky treacle note. Its dry, walnut astringency cleanses the palate. Drink now.

Pristine aromas of caramel, orange peel and leather are both powerful and pure. Flavors of toffee, cinnamon, cheddar cheese and raisin are first-rate, while the sum of the parts is brightened by perfect acidity. A fine Amontillado that should please anyone with a fondness for good Sherry.

This fine Amontillado is lightly sweet, with flavors of honey, raisins, fig and cinnamon, yet has good acidity for texture and balance. Great as an accompaniment to nuts, olives and cheeses.
